Elegant.
That?s what I had in mind as I created this real food dessert for my detoxers. Something simple and all grown up, like pearl earrings.
Here?s what really happened.
I made a huge mess pouring the warm mixture into glasses. I finally got it, stuck one glass in the fridge and drank the other one warm because I was dying to try it (tasty, but less-than-sophisticated approach.) Oh well.
The next day I took the glass out and my toddler, thinking it was a glass of milk, wrestled me for it. He finally got it and held the glass up to his lips. Tipped his head back. Waited for that moment where he?d drink milk like a big boy (ie no sippy cup).
He was very confused why the milk was stuck in the glass. But when I grabbed a spoon and showed him how to spoon it out, he caught on right away. And devoured it.
So there you have it. About as elegant as it gets in my house. For the rest of you ? try this with sparkling mint water or ginger tea, or post detox maybe a glass of Riesling.
Vanilla Pear Panna Cotta
1 can coconut milk
1/2 tsp. vanilla extract
1 Tbl. pure maple syrup
2 tsp. agar agar flakes (find in the asian aisle at natural food stores, near the nori)
1/2 pear, gratedIn a small pot, combine coconut milk, vanilla and maple syrup. Bring to a boil, then add agar agar flakes and simmer for 5 minutes, whisking continuously to dissolve the flakes.
Remove from heat. Grate pear into the coconut mixture. Allow to cool a bit, then pour into serving glasses and refrigerate at least 2 hours to set.
Serves 2.
